♥Fried Mackerel Marinated in Sauce♥
2 mackerel fillets
dashi soy sauce for seasoning mackerel fillets
potato starch for coating
1 green pepper
50ml dark soy sauce
50ml rice vinegar
preferred amount powdered dashi stock
rice bran oil for shallow fly
① Remove the bones from the mackerel and cut into 4 cm pieces.
② Wipe off excess water with a paper towel, season with dashi soy sauce,
and put it in the refrigerator.
③ Finely chop the onion, carrot and green pepper, and microwave it until it becomes tender.
④ Mix dark soy sauce, rice vinegar, mirin, water, and powdered dashi stock, and add ③.
⑤ Take out the mackerel from the refrigerator, drain it on a paper towel,
and coat with potato starch.
⑥ Shallow fry it in rice bran oil.
⑦ Wipe off excess oil from the fried mackerel with a paper towel, add it to ④,
and it is done once the flavors have blended.
